Lean Crispy Turkey and Nectarine Salsa Lettuce Boats

This fresh summer dish containing nectarines is a great way to shake up a traditional salad and also adds a healthy dose of vitamin C.

Ingredients

  • 1 gem lettuce

  • 300g turkey mince

  • 2 tblsp apple cider vinegar

  • 1 red chilli

  • 4cm ginger

  • 4 spring onion

  • 2 tbsp sesame oil

  • 1 nectarine

Preparation

Step 1

Heat a medium frying pan with 1 tblsp sesame oil on a medium heat. Add the spring onion and grated ginger and cook for 1 min. Combine with the lean mince and cook for a further 10-12 mins cooking until crispy and golden.


Step 2

To make the zesty nectarine salsa destone and chop the nectarine into small pieces. Finely chop the chilli (top tip: remove the seeds to make it less spicy!). In a bowl combine the nectarine, chilli, green spring onion and remaining sesame oil.


Step 3

Add the vinegar to the mince and mix well. Cook for a further 5 mins.


Step 4

Separate the lettuce leaves before arranging them on a plate.


Step 5

Stuff each leaf with one spoon of crispy turkey mince and top with a zingy spoonful of salsa.
